It's easy, delicious, and you probably have all the ingredients in your pantry. Why not make Chili Cashew Noodles this weekend?
Also, yes, I know my measurements in this recipe are all mixed up (metric or not, Ching, make up your mind!) but as long as it makes sense, we're good.

Serves 2-3 persons
INGREDIENTS
300g Egg Noodles (cooked according to package instructions)
4 tsps Sesame Oil
100g Pork (ground or small cubes)
1 tbsp Garlic, finely chopped
1 tsp Ginger, finely grated/chopped
1/3 cup Peanut Butter (smooth or chunky is fine)
1/3 cup Cashews, roasted
2 tbsps Soy Sauce
2 tbsps Chili Garlic Oil
1 tsp Sugar
Salt and Pepper, to taste
Green Onions, chopped (for garnish)
STEPS
Cook egg noodles according to package instructions, drain, toss in some sesame oil (to avoid sticking), then set aside.
Sauté pork, cashews, garlic, ginger, salt, and ground pepper in a hot pan over medium heat with some oil until pork is a little brown.
While waiting for the pork to brown, in a small bowl combine peanut butter, soy sauce, chili garlic oil or chili garlic crunch of your choice, sugar, and a splash of sesame oil. Mix thoroughly.
Combine the spicy sauce with the pork and toss in the hot pan for about 2 minutes. Adjust flavors according to taste. Throw in the noodles while hot and mix.
Serve warm and top with sliced green onions and more chili garlic oil. Enjoy!
